Hawaiian Airlines’ first-class tasting menu.

At Beverly Gannon’s two Maui restaurants, Joe’s Bar & Grill and the Hali’imaile General Store, the Dallas-born chef has been praised for her traditional American home cuisine with a Hawaiian twist. And, since 1999, Gannon, who trained at London’s Le Cordon Bleu and with Jacques Pépin before moving to Hawaii in 1980, has also been creating Hawaiian Airlines’ first-class menu.Last year, Gannon debuted a tasting menu that allows flyers to choose three of five items. A total of 20 dishes, such as an Asian duck tostada with orange sesame vinaigrette and braised short ribs with wild mushrooms, will be used in different groupings throughout Hawaiian’s 14 transpacific destinations.
In addition to the new tasting menu, Hawaiian’s first-class flyers can also enjoy 42 inches of legroom, noise-canceling headphones, and personal media players.
